Healthy eating doesn’t mean it doesn’t taste good is completely the opposite it means rich flavor and nutrition and you don’t have to give up anything not even bread or sweets. You can even eat bomb chips and cheese.
I am so excited to share with you guys my first food post. Since I had to fight Cancer I had to learn to eat better so I could heal my body from the inside out. I have learn so much about nutrition and how to get creative with vegetables. For 2 years I only ate vegetables and fruits. Now I integrated some lean meats like organic chicken and wild caught salmon and fish. All my exams show big recovery and improvement after chemo and I owe a lot to my recovery to the food that I am eating. “Food is medicine”
I am going to show you how to make a delicious ultra healthy Veggie Crusted Pizza. ( I added shrimp)
Prep time: 20 minutes
Roast: 50 minutes at 400 degrees
Broil: 7 minutes per batch
1 3 1/2 to 3 3/4 spaghetty squash
1 Tbs. olive oil nonstick cooing spray
1 Egg, lightly beaten
1 Tbsp. Snipped fresh basil or 1 tsp. driedbasil, crushed
1/2 tsp. slat desired pizza toppings
- Preheat oven to 400 degrees. Gut squash in half lengthwise; remove and discard seeds. Brush the insides of squash halves with oil. Place squash halves, cut sides down in a 15 x10 inch backing pan. Bake 50 to 60 minutes or until squash is tender. Remove from oven; cool slightly.
- Preheat broiler. Using a fork, remove squash pulp from shells. Place squash pulp in a colander set in the sink and press with a spatula to remove any excess moisture.
- For crusts, line two large baking sheets with foil; coat foil with cooking spray. In a bowl combine egg, basil and slat. Stir in drained squash. Spoon squash mixture into six mounds (about 1/2 cup each) on to the prepared baking sheets. Spread each mound into a 6-inch circle; lightly coat with cooking spray.
- Broil crusts, one baking sheet at a time, about 4 inches from the heat about 5 minutes or until lightly browned. Top with desired pizza toppings. broil about 2 minutes more or until toppings are heated an cheese (s) if using is melted.
Make 6 servings.
Tip After broiling one pan of mini pizzas, place then on the bottom oven reach to keep warm while broiling the second pan of pizza.
